In the comments on the last post, lk asked for the recipe for the beef and potato soup, so here it is:

Beef & Potato Soup

4 cups water
1 lb. stew meat
16 oz. frozen hashbrown potatoes (I used the little cubes, not the shreds, but I think you could do either)
2 4 oz. cans of mushrooms, undrained
1/2 cup chopped onions*
1 packet dry onion soup mix
16 oz. salsa

1. Spray slow cooker with cooking spray.
2. Add all ingredients, mix well.
3. Cook on low for 8-9 hours.

Points value: 3 pts. per cup

I'm not sure how many (1-cup) servings it makes...probably around 6-8. We fed 3 people and had leftovers.

*the original recipe called for a full cup of onions, but the WW leader said that the onion was very strong in hers, with the onion soup mix + a cup of onions. Since I'm not a huge fan of the onion, I cut the amount in half. I was a little worried that I might lose some of the broth, but half a cup was plenty.
